Bacardi Mojito

Bacardi started in Santiago de Cuba in 1862, and the mojito is a Cuban drink, so this pairing is not marketing. Superior is filtered through charcoal and aged briefly, which leaves it light and clean.

Ingredients

  • Bacardi Superior White Rum 750ml
  • 3/4 oz fresh lime juice
  • 2 tsp sugar, or 3/4 oz simple syrup
  • 8 to 10 mint leaves
  • Soda water, crushed ice

Method

  1. Put the mint, sugar and lime juice in the glass. Press gently with a muddler four or five times. You want the oil, not the leaf.
  2. Add the rum and fill the glass with crushed ice.
  3. Stir from the bottom up, to lift the mint through the drink.
  4. Top with soda water and add a fresh sprig of mint.

The one thing that matters

A mojito needs a rum that stays out of the way of mint and lime. Anything heavy or heavily aged will bully them. Light white rum is the correct choice, not the cheap one.

What rum is best for a mojito?

A light white rum. The drink is built on mint and lime, and a heavy aged rum will bury both. Bacardi Superior is the traditional Cuban choice and it is genuinely right, not just cheap.

Should I use sugar or simple syrup in a mojito?

Simple syrup dissolves instantly and is more reliable. Granulated sugar works and helps grind the mint slightly as you press, but it can leave grit at the bottom.
