Mojito
Rum, lime, sugar, mint and soda. The whole drink turns on how you treat the mint: press it to release the oil, then stop. Tear it up and you get a glass of bitter green.

Ingredients
- 2 oz white rum
- 3/4 oz fresh lime juice
- 2 tsp sugar, or 3/4 oz simple syrup
- 8 to 10 mint leaves
- Soda water, crushed ice
Method
- Put the mint, sugar and lime juice in the glass. Press gently with a muddler four or five times. You want the oil, not the leaf.
- Add the rum and fill the glass with crushed ice.
- Stir from the bottom up, to lift the mint through the drink.
- Top with soda water and add a fresh sprig of mint.
The one thing that matters
Slap the garnish sprig between your palms before it goes in. That wakes the oil up, and it is the first thing you smell.
