Espolon Paloma

A paloma has less to hide behind than a margarita, because grapefruit soda is sweeter and softer than lime juice. You want a tequila with some pepper in it, and Espolon has exactly that.

Ingredients

  • Espolon Blanco 750ml
  • 1/2 oz fresh lime juice
  • 4 to 5 oz grapefruit soda
  • Pinch of salt
  • Ice, grapefruit or lime wedge

Method

  1. Fill a tall glass to the top with ice.
  2. Add the tequila, the lime juice and a small pinch of salt.
  3. Top with grapefruit soda and stir once, gently, so you keep the fizz.
  4. Garnish with a wedge of grapefruit or lime.

What tequila is best for a paloma?

A blanco with real agave character. Espolon works because it has pepper and citrus that carry through the grapefruit soda. A very smooth premium blanco can get lost.

Blanco or reposado in a paloma?

Either, and unlike a margarita the reposado genuinely works here. The oak sits well with grapefruit. Try both.
