La Marca is the prosecco most American brunches are poured from, and there is a reason beyond the blue label. It is off-dry, so it carries peach and citrus of its own, and orange juice sits on top of that rather than fighting it.

Ingredients

  • LAMARCA PROSECCO D.O.C. 750ML
  • 2 oz orange juice, cold
  • Orange twist, optional

Method

  1. Chill everything first. Warm juice kills the bubbles on contact.
  2. Pour the sparkling wine into the flute first, about two thirds full.
  3. Top with orange juice. Wine first stops it foaming over.
  4. Do not stir. The pour has already mixed it.

The one thing that matters

Pour the wine first and the juice second. Juice first makes the wine foam straight over the rim, which is how half a bottle ends up on the tablecloth.
