What Wine Goes With Thanksgiving

Pinot Noir, Riesling, Beaujolais or sparkling. Those are the four that work at Thanksgiving, and they work for the same reason: they are high in acid and low in tannin. Buy one bottle for every two adults and one extra, and you are done thinking about it.

That is the whole answer. The rest of this explains why the expensive bottle you were about to buy is the wrong one.

Why big reds fail on this particular table

Thanksgiving is the hardest meal of the year to match, because it is not one dish. It is sweet potato and cranberry sauce next to salty gravy and fatty turkey skin, with something vinegary hiding somewhere on the plate. No single wine flatters all of that.

What a wine can do is cut through it. That takes acid. What it must not do is add more weight, and that is exactly what tannin does. A big Cabernet against cranberry sauce turns metallic and bitter, and the wine you spent the most on is the one that tastes worst.

The bit people forget
