Cupcake Prosecco is the value end of the shelf, and for a spritz that matters more than usual, because you are about to pour two ounces of Aperol on top of it. Nobody is going to detect a subtle prosecco under that.

The one thing that matters
This is the bottle for a party where you are making eight of them. Save the good prosecco for drinking on its own.
Cupcake Prosecco does the job. Once two ounces of Aperol and a splash of soda are in the glass, the differences between an inexpensive prosecco and an expensive one largely disappear.
You can, but both are drier and more austere. Aperol needs a little fruit to push against, so prosecco stays the better match. If you only have champagne, add a quarter ounce of simple syrup.
